Proso millet sambar rice

INGREDIENTS:

  1. Proso millet - 1 cup
  2. Toor dal - ½ cup
  3. Tamarind - lemon size
  4. Oil
  5. ghee
  6. Mustard
  7. Jeera
  8. Fenugreek seeds
  9. Chopped Onion - 1 big
  10. Chopped tomato - 2 medium
  11. Green chillies - 2
  12. Curry leaves & coriander leaves - as required
  13. Turmeric
  14. Chopped Drumstick -2
  15. Chopped carrot - 2
  16. Chopped beans - 10
  17. Chana dal - 1 tablespoon
  18. Urad dal - 1 tablespoon
  19. Coriander seeds - 3 tablespoons
  20. Red chillies - 6
  21. Grated coconut - ½ cup
  22. Salt to taste
  23. Add more veggies if you like.

INSTRUCTIONS:

  1. Soak tamarind for 10 minutes
  2. Dry roast millet till you get a good aroma.Rinse and boil millet with 3 cups of water. Boil till millets are cooked properly
  3. Pressure cook 1/2 cup toor dal
  4. Roast chana, urad dal, methi, coriander seeds and red chillies,add coconut and grind the mixture to fine powder.
  5. Heat oil. add mustard, jeera and methi,onion and curry leaves. saute well
  6. Add tomatoes and green chillies. saute well
  7. Add the powder mixture and saute well till you get a good aroma. Now add vegetables, tamarind pulp, turmeric and salt.
  8. Add mashed toor dal and coriander leaves.add enough water and cook on low flame
  9. Close a lid and stir occasionally till vegetables are cooked and add cooked millet.
  10. Pour some ghee and mix gently. Sambar rice is ready to serve. Serve hot.
