Recipe using Seeraga Samba Rice:
Dish: Seeraga Samba Brinji Rice

- 1 cup Seeraga samba rice
- 1½ cups veggies (as per your choice)
- 2 green chilli sliced
- 1 brinji leaf
- 1 Onion finely chopped
- 4 teaspoon Oil
- 1 tablespoon Ghee
- 2 teaspoon ginger garlic paste
- 1 tsp Biryani masala
- 1¼ cups Water
- a few mint leaves
- a few coriander leaves
- Salt as required
- Clean and soak 1 cup of seeraga samba rice.
- Drench for twenty minutes in water
- Make a fine paste with a few mint and cilantro leaves. While milling, very little water can be added.
- Inside a massive cooking pot add 4 tsp oil and 1 tablespoon ghee.
- Add 2 tiny whole green chilis and 1 bay leaf.
- Add 1 finely diced onion presently. Cook it over a low flame.
- Saute the onions with a pinch of salt. This will help with quick or even cooking.
- At this point, add 2 teaspoons of ginger garlic paste. Saute till the raw smell fades.
- Now add the mint-coriander paste and cook for a few minutes.
- During this point, add the Biryani masala.
- Add 2 cups of veggies as per your selection.
- Blending thoroughly, then add the drenched rice.
- Examine for salt. Shut the cooker cover.
- Allow this to cook for 1 whistle and 7 mins on the lowest heat.
- Flip off the machine and enable the stress to be innately released.
- Remove the rice from the cooker and mix gently.
- Serve warm with onion raita.
