Little millet mint rice

INGREDIENTS

  1. Little millet - 1 cup
  2. Water - 2 cups
  3. Mint leaves - 1 cup
  4. Coriander leaves - ¼ cup
  5. Green chillies - 2 or 3 depends upon the spice level
  6. Ginger garlic paste - 1 teaspoon
  7. Chopped onion - 1
  8. Cinnamon stick - 1 small
  9. Bayleaf - 1
  10. Clove - 2
  11. Chopped or grated Carrot - ½ cup
  12. Salt to taste.
  13. Oil - 2 tablespoon

INGREDIENTS

  1. Cook little millet rice in a pressure cooker with 2 cups of water, and bay leaf at medium flame for 2 whistles. Millet rice has to cool otherwise it will become mushy.
  2. Grind mint leaves, coriander leaves,and green chillies with minimum water in a blender and keep it aside.
  3. In a hot pan, take 1 teaspoon of oil. Add cinnamon stick, clove to it and fry for a minute.
  4. Add chopped onion and fry till translucent. Add ginger garlic paste.
  5. Add chopped carrots and stir well, add mint mixture. Cook the mixture till the raw taste of mint and coriander disappears. Add salt to taste.
  6. Add the cooked little millet rice and mix evenly. Remove from flame.Serve hot with some raita.
