  • 4 cups milk

  • 2 tbsp ghee

Instructions:

  • Rinse the Kodo Millet in water a few times until the water runs clear. Soak the millet in water for at least 30 minutes.
  • Drain the water and transfer the millet to a pressure cooker. Add 2 cups of water and pressure cook for 2 whistles or until the millet is cooked

  • Add the fried nuts and mix well.
  • Turn off the heat and let the Kheer cool down a bit.
  • Serve warm or chilled.

Tips:

  • If you don't have a pressure cooker, you can cook the millet in a pot with 4 cups of water. Cook for about 20-25 minutes or until the millet is cooked through.
  • You can adjust the amount of sugar according to your taste.
  • Use full-fat milk for a creamier texture.
  • Soaking the millet beforehand helps to cook it faster and ensures a smoother texture.
  • To enhance the flavour, you can add a few drops of rose water or kewra water to the Kheer.
