  • 1 cup Kodo Millet
  • 4 cups milk
  • 1 cup sugar
  • 1/2 tsp cardamom powder
  • A handful of chopped nuts (almonds, pistachios, cashews)
  • A pinch of saffron strands
  • 2 tbsp ghee


  • Rinse the Kodo Millet in water a few times until the water runs clear. Soak the millet in water for at least 30 minutes.
  • Drain the water and transfer the millet to a pressure cooker. Add 2 cups of water and pressure cook for 2 whistles or until the millet is cooked

  • Once the pressure is released, open the cooker and mash the millet using a fork or a potato masher. Keep aside.
  • In a heavy-bottomed pan, heat the ghee and add the chopped nuts. Fry until they turn golden brown and set them aside.
  • In the same pan, add the cooked and mashed millet and sauté for a few minutes until the millet is slightly toasted.
  • Pour the milk into the pan and stir continuously to prevent lumps. Cook on low heat for 15-20 minutes or until the milk thickens and the millet is well cooked.
  • Add sugar, cardamom powder, and saffron strands to the pan and mix well. Cook for another 5 minutes.
  • Add the fried nuts and mix well.
  • Turn off the heat and let the Kheer cool down a bit.
  • Serve warm or chilled.


  • If you don't have a pressure cooker, you can cook the millet in a pot with 4 cups of water. Cook for about 20-25 minutes or until the millet is cooked through.
  • You can adjust the amount of sugar according to your taste.
  • Use full-fat milk for a creamier texture.
