INGREDIENTS:
- Proso millet - 1 cup
- Toor dal - ½ cup
- Tamarind - lemon size
- Oil
- ghee
- Mustard
- Jeera
- Fenugreek seeds
- Chopped Onion - 1 big
- Chopped tomato - 2 medium
- Green chillies - 2
- Curry leaves & coriander leaves - as required
- Turmeric
- Chopped Drumstick -2
- Chopped carrot - 2
- Chopped beans - 10
- Chana dal - 1 tablespoon
- Urad dal - 1 tablespoon
- Coriander seeds - 3 tablespoons
- Red chillies - 6
- Grated coconut - ½ cup
- Salt to taste
- Add more veggies if you like.
INSTRUCTIONS:
- Soak tamarind for 10 minutes
- Dry roast millet till you get a good aroma.Rinse and boil millet with 3 cups of water. Boil till millets are cooked properly
- Pressure cook 1/2 cup toor dal
- Roast chana, urad dal, methi, coriander seeds and red chillies,add coconut and grind the mixture to fine powder.
- Heat oil. add mustard, jeera and methi,onion and curry leaves. saute well
- Add tomatoes and green chillies. saute well
- Add the powder mixture and saute well till you get a good aroma. Now add vegetables, tamarind pulp, turmeric and salt.
- Add mashed toor dal and coriander leaves.add enough water and cook on low flame
- Close a lid and stir occasionally till vegetables are cooked and add cooked millet.
- Pour some ghee and mix gently. Sambar rice is ready to serve. Serve hot.
