B&B ORGANICS MAPPILLAI SAMBA FLAKES (FLATTENED RICE)
B&B Organics Mappillai Samba Flakes (aval/ poha/atugulu/ avalakki) is made from organically grown mappillai samba rice in Tamil Nadu. The rice is grown in South Asia from the 16th century and associates its name to a year-old tradition, where a groom has to prove his fortitude by lifting heavy rocks. To boost his energy and increase his body strength, the groom was fed Mappillai samba rice.
The rice holds both vitamin B6 and magnesium abundantly. It benefits our body by increasing immunity and stamina, aids digestion and helps in curing mouth and stomach ulcers. Apart from the benefits, the rice holds, having it in the form of flakes has added benefits. When Flakes is made, rice is parboiled, beaten thin and dried for about 2 days. This causes the upper part of the grain to ferment, making the rice in probiotic bacteria and Vitamin D. The pro-biotic elements are not present in the conventional form of rice and this certainly gives Flakes an uppercut. Flakes is also found to be rich in Vitamin B, Vitamin C, and dietary fiber.
This rice has been cultivated widely in Tamil Nadu and is more suitable for organic farming since it is hardy and does not demand much of fertilizers and pesticides. It was cultivated in the 16th Century and was lost after the green revolution. Our farmers normally cultivate this rice during Samba and Late samba (between July 15th to January 14th and September 15th to February 14th).
The rice is parboiled, rolled and flattened to produce flakes. The Flakes are capable of absorbing a large volume of liquid when used in a different recipe, therefore imbibe flavors well. Recipe: MAPPILLAI SAMBA FLAKES UPMA

- Mapillai Samba Flakes- 1 and ¼ cup
- Onion – 1 chopped
- Turmeric powder – ¼ tsp
- Green chilies- 1 tbsp chopped
- Peanuts – 2 tsp
- Mustard seeds- 1 tsp
- Urad dal – 1 tsp
- Salt to taste
- Curry leaves- 1 stick
- ½ lemon juice
- Take B&B Organics Mapillai Samba Flakes and wash it in running water.
- Soak the Flakes for 10 minutes and drain the water completely. Make sure it is not mushy.
- Heat oil in a pan. Temper mustard seeds, urad dal, peanuts, and curry leaves.
- Add chopped onions and chilies.
- Stir well and add turmeric powder to it. Now add Flakes and add salt.
- Add ¼ cup of water to it and cook covered for 2 minutes.
- Add a few drops of lemon juice to it and serve hot.
