About Sugarcane Jaggery / Mandai Vellam
Pure and Organic sugarcane juice is used to make our Sugarcane jaggery. The extract is purified into a huge flat iron vessel, then cooked over low to middle heat and pumped by hand. The juice is transferred into wooden containers after it has attained a honey-like accuracy. As it cools, the greasy jaggery is squashed with a timber roller and managed to scrape with carved wood forks and kitchen utensils. This yields granular jaggery, which is then ground and separated based on particle sizes. The end result is a sweet, nutritionally fine Jaggery that you can quickly integrate into your everyday cooking.
