Barnyard millet chakli

Ingredients:

  1. Barnyard millet – 1 cup
  2. Besan or Gram flour – ¼ cup
  3. Rice flour – ¼ cup
  4. Butter – 4 tbsp
  5. Cumin Seeds – 2 tbsp
  6. Sesame – 2 tbsp
  7. Red chilli powder – 2 tbsp (as per required spice level)
  8. Salt
  9. Oil/Ghee
  10. Asafoetida(hing) – 2 pinches

Method:

  1. Soak millets for an hour and grind without water.
  2. In a bowl add ground millet powder, besan/gram flour, rice flour, cumin seeds, sesame, butter, salt, red chilli powder, asafoetida(hing) and mix well.
  3. Then add water little by little and knead it to a soft dough.
  4. Coat the chakli press with oil from inside, fill it with one handful of dough and squeeze it to make swirls/chaklis on a plate or sheet.
  5. Heat oil in a pan, put prepared raw chaklis, deep fry till crisp & golden brown.
